Description

It is the most traditional pasta of the place that has grown generations of people, since the time of our great-grandfathers. Made from flour and milk, trachanas is divided into two main categories, sour and sweet.

Sour Trachanas: Sour trachanas is made with soft wheat flour and fermented with sour milk and eggs, preserving its characteristic acidity. After going through the drying process, it is cut into grains with a diameter of 2-3 millimeters in order to maintain its texture during cooking. Sour trachanas can be cooked with enough water like a soup, thicker, with meat or with the addition of tomatoes.

Traditional handmade pasta made with fresh sheep's milk from our production and with our own fresh eggs. We are one of the few workshops that uses five eggs for every kilo of pasta! Our pasta does not fall apart during cooking and boils very quickly. It only takes 3-4 minutes of boiling and the delight will be served on your plate!
