Ingredients
300 gr. trachanas
300 ml fresh milk, whole
5 tsp. tablespoons of strained yogurt
400 gr. country sausage of our choice, cut into slices
2 tsp. olive oil soup
200 gr. diced feta cheese
salt, freshly ground pepper

Procedure In a deep pot, heat 1 liter of water (or broth if you have it) along with the milk over medium heat. As soon as the liquid boils (you need to be careful because the milk will "swell", that's why it's important that the pot is deep), pour in the trachana broth, stirring constantly. Cook, stirring occasionally, until the trachanas swells and softens and the soup is as thick as we like. Remove from the heat and as soon as the boiling stops and the temperature drops slightly, incorporate the yogurt, stirring. Add salt (not too much, especially if the slice we are going to add is salty) and pepper.
In a frying pan, brown the slices of sausages in the oil for 3-4 minutes.
Serve the trachanosupa in deep dishes and garnish with the feta cheese and the sausage. Alternatively, serve the sausage on the side. Serve with bread.
Tips
- A spicy note can be achieved if a spicy vegetable trachanas is used and the sausage is country spicy.
- In the event that someone does not want to consume meat, they can use vegetable broth.
